Because those countries are already in NATO and an attack on one is an attack on all. Russia doesn't want that. However, Ukraine is not in NATO (at least, no yet). The invasion was supposed to keep Ukraine from joining, but it looks like it might wind up improving their chances of being admitted.
Far more likely is that Putin couldn’t accept Ukraine drifting closer to Europe and out of his political and economic influence. So he decided he’d have it, or as much as he could and reduce the rest to rubble.

One worry was that once Russia took over Ukraine, they would have kept going on to Moldova.
