Turkish restaurants is among your favourites because you haven't your own culinary culture. Americans haven't too. My point here you have to imitate one of culinary cultures and convert it to your own. Turkish cuisine, Italian, Greek, even Arabic cuisine can be. or a mixed kitchen. but you must have your own kitchen. people have discovered which foods are healthy after cooking for thousands of years. People know which food how has to be cooken and when has to be eaten. for example, yogurt can be eaten alone, but if you eat too much it will spoil your stomach. we eat yogurt with pasta or dolma. If they don't, we'il put bread in it. in this way, it causes less stomach fatigue.
Yogurt is anti-oxidant and anti-carcinogenic. it is the most common food that australians should consume. If you consume butter alone, it will make fat, excessive consumption can make vascular congestion. but less harmful in the molten state. therefore we use butter melted in the dish. if we have to eat individually, it is much more delicious and healthy on a warm bread.

Excess salt will disrupt your stomach. however, salt is also preventive of cancer. I'm sure you Australians are against salt. but there is a risk of elevating blood pressure. I'm not saying salt is very good, it should be consumed less, due to risks.
I'm not a food expert. but I know this and countless things, because it's our food culture. this information comes culturally spontaneously. you should know and spread them.
Don't forget, yogurt is the best anti-oxydan. I know many people eats yogurt regularly and lived more than a century.
