Where do the birds fly?

In the RE model, some birds fly south for the winter. In the FE model, where do those birds fly?

That depends on where you are on the earth.  If in the southern hemisphere, they would fly north for the winter, with the direction (north/south) being relative to the equator.

To the same places as in the FE model.
You don't need a south pole for that.
You could do it on a cylindrical Earth just fine.

I imagine that "In the FE model" "those birds fly" rimwards "for the winter." That does not seem a problem.

You'll have to learn proper flat-earth terminology. Here that is described in the words of long-term flat-earthers:

Much round-earth terminology is used for the sake of simplicity.  When we use terms like atmosphere, north or, the eastern hemisphere, it isn't a "checkmate" moment for round-earthers. 
We use them because it's easier for people to understand than atmoplane, hubward, or the widdershins semicircle.

It has been theorized that the farther you move south, or rimwards, the farther you get from the sun.

North is hubward, south is rimward, widdershins is counterclockwise... and shit what is clockwise? I can't remember, OH it's sunwise.

More usually turnwise!

Or summarising:

If you really want other names for the directions, how about

North = Hubwards
South = Rimwards
West = Turnwise (edit: thanks HiveLord for pointing this out)
East = Widdershins

I occassionally use this terminology in my posts, when I want to differentiate FE navigation from RE navigation.
