Rockets don't fly straight up and make a sharp turn.  They pretty quickly move into the trajectory they will ultimately need to establish the orbit they are going for.
This is what you see.  You didn't prove anything, you simply claimed it doesn't look right to you.

Also dutchy, your photo of a plane creating a Sonic boom may well be simply showing transonic effects, which occur as a plane approaches, rather than breaks, the speed of sound, and are dependent on atmospheric pressure, humidity, etc.
