The northern and southern celestial poles (yes there is a southern celestial pole) change position in the constellations by approximately 1 degree every 72 years.

It is caused by a gradual wobbling of the earth because of the gravity from the massive, distant sun, and the relatively nearby moon. How does this work on a flat earth where there is no gravity?

To put it simply, it doesn't. Because the earth is not flat and gravity does exist.
