I recently took a trip in Sequoia National Park. Even at times when I had no cell service due to the mountains, I recieved signals from 7 satellites. This is somewhat anectdotal, but I might be able to dig up some proof if necessary.

As Engy is so fond of pointing out, GPS does not technically require satellites to work.  And, as you like to point out, there are some location services that do work off of cell towers.  However, those cell towers do not provide global coverage and the GPS infrastructure is (with the exception of the military channels) widely available to the public.  This means that you can use your own radio equipment to track the GPS signals and determine for yourself if those signals are from stationary or moving sources.  You are also free to decode the signals and determine for yourself if the data encoded matches what the documentation says.

In fact, you can even build your own GPS receiver if you don't trust the commercially available ones.
