You're right, there is no evidence whatsoever.  That is unless you count all of the people who watched the launches in person.  Or all the people who watched them on live TV.  Or all of the moon rocks they brought back.  Or the retroreflectors and other science experiments they left on the moon.  Or the mission and flight reports.  Or the command modules that were flown and are now on display in various museums.  Nope, no evidence at all.

But nobody watched the landings on the Moon.
