If the earth is flat how does the Dubai to San Fransisco flight work?

Hey all, just registered. Recently been watching some Math Boylan videos - funny guy - and became perplexed by this theory of a flat earth.

How is the Dubai to San Fransisco flight able to fly across the Arctic to decrease flight time?

I have asked the same question about San Fransisco the Udon Thailand. On the FE map a direct flt is to fly north to AK then over Siberia, China, Laos to Udon. What we flew was west to HI then Guam to PI then to Southern Thailand before arriving at Udon.
