We've defined up at each point on the Earth as being the opposite direction to the normal vector accelerating us to the Earth. Why would you try and extend this to slanted slabs of rock?

This one that barely approximates the direction you knew from the day you were tought the concept of up and down, is the only one we expect you to accept, as long as you stay on earth.  As long as you are on earth, the sun is not down (unless it's midnight in December), and neither is the core of the galaxy.  If you study the concept of gravitational field strength, you should understand why these are not considered dominant on earth.  If on earth, the sun's gravity really was dominant over the earth's own gravity, the tidal forces would shred the earth into tiny pieces.  This does not happen.  Therefore the earth's gravity at it's surface is dominant over the sun, therefore standing on the ground, down really is just down for all we care, rather than towards the sun.
