Flat Earth General / Double Standard Regarding Curvature Evidence

Round Earth and Flat Earth theories both involve curvature that the other disagrees with. One is the curve of a spherical earth, the other is the latitude lines around the North Pole. Regarding this, I've noticed a few patterns:
1) FEers dismiss any evidence of curvature, citing their own "proofs" (generally, the Bedford Test).
Since these tests can be difficult to show or even conduct, I understand why this is one of the more contested points around here.
2) FEers offer no evidence for circular latitudes.
The only rationale I've seen is because "that's how it would have to work." And I get that, I do. If the Earth is flat, than the directions of East and West would actually just be lines that are tangent to a circle. However, why is there no evidence for this being factual? Why do pilots not account for this curvature when flying?
It seems like a test for this should be extremely easy, yet FEers accept it as fact.
