Even IF it were true that it is always at eye level (it isn't but your eyes can't tell the difference of a few degrees from level) I've never seen it explained how it supports flat Earth either. That should also always be below eye level.

You would never see that and could not reliably measure it with the level app on a phone. A surveyor could easily measure it easiy from a 100' or so, but
