At sunset the are angled slightly away from sun due to curvature of earth, furthermore crystal-clear evidence that the sun gets "below" the level of clouds as it sets. How can the FE model explain this?

the FE model CANNOT explain this, so they claim it's some sort of illusion/mirage/hallucination/whatever.

but in RE how does the sun get below the clouds if the clouds are as well cured with the earth instead of just above our heads

it's a question of angles: at sunrise/sunset the sunlight is almost parallel to the angle of the ground, so it hits the bottom of clouds on the other side of the observer.
that's the RE explanation.
