Your limited experiment can not take into accout refration.
That's true, wouldn't refraction only explain what we see at sunrise and set, i.e. The sun never getting smaller but actually sinking below the horizon if the atmospheric conditions were exactly the same every sunrise and sunset?  And how does that explain how we can see the shadow of the horizon predictably creep up the face of a mountain at sunset?
